Part 1: Provide two days of menu planning for your patient. Your patients special diet will be gluten free and casein free. You are required to keep your patients diet within the USDA Dietary recommendations. You will track calories, sodium, carbohydrates, saturated fat, trans fat, total fat, cholesterol, fiber, protein, and sugar. You will need to do this in Excel. If you are not comfortable with making your own Excel spreadsheet. You are required to provide daily totals for each aspect of their daily intake. Example: total calories for each day, sodium, carbs, etc.

Part 2: write a minimum of a one-page paper, with explanation of the special diet you were assigned, what foods should be avoided and why, what foods would be beneficial and why, financial concerns, challenges the patient may have in following the diet, etc.
